At This Colorado Whiskey Hotel, You Can Sleep Steps From the Stillhouse

Hotels and cottages are letting whiskey enthusiasts go beyond the tasting room with exclusive experiences, behind-the-scenes access, and beds mere steps from the stillhouse. In this excerpt from our print article “Night at the Distillery” (taken from the Men’s Journal Fall 2026 Whiskey Special print edition), we take a look at a unique distillery/hotel in Colorado.

Located just 30 minutes from Aspen, downtown Carbondale is home to one of the country’s few distilleries with on-site lodging. Marble Distilling Co.’s The Distillery Inn features five contemporary mountain suites overlooking Mount Sopris, with luxury touches like Italian linens, fireplaces, and private balconies.

Steps downstairs, guests can watch the team at Marble Distilling Co. at work before sampling the distillery’s Colorado-made bourbon and rye, both crafted with locally grown grain and exceptionally pure Rocky Mountain water.

The tasting room is a destination in itself. The bar is anchored by a dramatic nine-ton slab of locally quarried Yule marble—the same prized stone used to build the Lincoln Memorial and the Tomb of the Unknown Soldier in Washington, D.C.—giving every pour a distinctly Colorado sense of place.

Marble Distilling Co. operates under the ethos of “Best Taste. Zero Waste.” The distillery is a sustainable leader in the whiskey world, employing a proprietary water- and energy-recapture system that saves more than four million gallons of water annually while recycling heat to warm both the distillery and the inn.

Besides a few single cask bourbons and ryes, Marble also offers a Gingercello, a play on the classic Italian liqueur made with fresh-cut ginger and lemon zest; a Moonlight Expresso liqueur; and a line of non-alcoholic “shrubs” and mixers.

The One Thing You Don’t Want to Miss While You’re Visiting

Visitors are perfectly positioned to explore the Roaring Fork Valley’s blue-ribbon fly-fishing streams, mountain biking and hiking trails, and world-class ski runs—depending on the season—before partaking in a tasting flight or cocktail.

Also be sure to check out the Marble Barrel Club, which lets guests fill a three-gallon barrel with spirit. You can have it aged on-site or at home.
